I don’t know what to call this mess I made, but it was tasty so I’m sharing the “recipe.”

What I had in the freezer and fridge: 2 chicken breasts, frozen chopped spinach, Neufchatel Cheese, leftover white rice, 14.5 oz can of diced tomatoes.

First I cut up the chicken and tossed it in a pan with a couple tablespoons of water. I sprinkled in some garlic powder, salt, and pepper.

I cooked the chicken until I could break the pieces up even smaller. Then I lowered the heat to medium-low as I added other things.

Next I added 3 ounces of Neufchatel Cheese. It’s a kind of cream cheese that’s supposed to have 1/3 the fat. (I was going to use it in my pumpkin cheesecake, but used regular cream cheese instead.)

I added about 1 cup of spinach to the mix.

I stirred everything together and added chili powder and onion flakes for taste.

I drained a can of tomatoes and added it to the chicken mixture.

I mixed everything together and it smelled really good. There looked like there might be too much liquid. So I took a look through the fridge for something to add…

There was some leftover white rice from yesterday. I put about 1-1/2 to 2 cups in a bowl, splashed it with a little water, and microwaved it for 2 minutes to heat it up.

I added the rice to the chicken mixture…

…and stirred everything together. It’s completely cooked at this point and you could eat it like this.

Seriously, it was very tasty. A few squirts of lime juice and some cilantro would have made this a meal on its own.
